Ottilie von Goethes Apfel Créme

Als wir in diesem September in Weimar weilten, schien der Herbst noch ganz fern. Bei strahlend blauem Himmel führte uns der Weg auf der Sternbrücke über die Ilm bis hoch zum Goethe-und Schiller-Archiv, wo Ende August die kleine feine Ausstellung "Sardellen Salat sehr gut" eröffnet wurde. In den wunderschönen Vitrinen erwarteten uns Kochbücher, Menükarten und Einkaufslisten aus längst vergangenen Zeiten.
Und das Bonbon: einige der Rezepte gab es als Karten zu erwerben und dank meiner stets aufmerksamen Reisegesellschaft fand sich bei meiner Heimkehr Ottilie von Goethes Apfel Créme Rezept im Gepäck.
Mittlerweile ist es Herbst und unser Wiesenprinz hat uns in diesem Jahr die eifrige Pflege mit vielen Äpfeln entlohnt.
While staying in Weimar this past September, Autumn was still far away. We had wonderful blue skies, when we crossed the River Ilm via the bridge Sternbrücke to pay a visit to the Goethe and Schiller Archiv, where the interesting exhibition "Sardellen Salat sehr gut" has started in August.
Arranged in beautiful displays we've had a peek into cooking books, menues and shopping lists of bygone days.
And the treat: some of the recipes were available as cards and thanks to my always amiable travel companion I was provide with Ottilie von Goethe's Apple Créme recipe.
Meanwhile it is Autumn and our prince of the meadow has rewarded our care with plenty of apples.
Der große Apfelkorb war rasch gefüllt. Leider weiß ich nicht, welche Sorte es ist, der Apfel ähnelt dem Boikenapfel und eignet sich eigentlich nur für Kuchen...oder eben Ottilie von Goethes Apfel Créme.
The basket was quickly filled. Unfortunately I do not know which kind of apple it is, it resembles the German Boikenapfel and actually is only a good additon to cakes...or Ottilie von Goethe's apple créme.
 
Für einige der großen Äpfel ging die Reise in die Küche, er Rest wurde eingelagert. 
A few of the big apples went into the kitchen, the rest into storage.

Und dann kam Ottilies Rezept zum Einsatz. Wie die meisten historischen Rezepte erscheinen sie uns heute ein wenig lückenhaft.
And then I fetched Ottilie's recipe. Like most historical recipes it was lacking a few details.

Apfel Créme
Man bratet 20 schöne Äpfel im Ofen, rührt das Marks ohne die Kerne zart durch, thut 1/2 Pfund fein gesiebten Zucker, 1 Theelöffel Rum, Zimt oder Vanille hinzu, thut es in deine Form und läßt es 1/2 Stunde backen.
Translation:
You bake 20 nice apples in the oven, then stir the apple mark without the seeds, add 1/2 pound of fine sugar, 1 tb rum, cinnamon or vanilla, put it in a mould and bake it another 1/2 hour in the oven.

Weil ich ein wenig ratlos darüber war, welche Äpfel Ottilie für ihre Créme üblicherweise auswählte und ob diese, wie meine, annährend die Größe eines Katzenkopfes haben, suchte ich nur neun Äpfel statt zwanzig aus.
As I had no clue which kind of apple Ottilie usually had chosen for her créme and if they'd have the size of a cat's head like mine, I only took nine apples instead of the twenty.
Und außerdem entfernte ich die Kerngehäuse (hier im sauerländischen Westfalen "Nürsel" genannt) schon vor dem Backen. Bei etwa 200°C ging es für etwa 20 Minuten in den Ofen. Obacht! Den Ofen besser nicht aus den Augen lassen, denn sonst gibt statt zart gebackener Äpfel eine apfelschaumige Überraschung, die leicht den halben Ofen für sich beanspruchen kann.
Nach dem Backen habe ich die Schalen entfernt und die weiteren Zutaten in die Apfelmasse gerührt, ehe es wieder in den Ofen ging.
I also cut out the core before baking. I baked them at approx. 200°C for twenty minutes. Stay close and watch the oven, because the apples can easily turn into a foam monster and claim the whole oven.
After baking I picked out the apple skin before adding the other ingredients to the apple sauce. And off it went into the oven again.
Heraus kam ein köstliches Apfelmus, das mit Ottilies klingendem Namen "Apfel Créme" natürlich noch besser mundet.
It is a delicious apple sauce, which tastes even better when called "apple créme".

Es schmeckt warm ebenso gut wie kalt und ist auch als Kuchenfüllung hervorragend...
No matter if you prefer it warm or cold, it's very tasty and also perfect for a cake stuffing...
...ebenso unschlagbar ist es dabei, einem den Nachmittag am Nähtisch zu versüßen.
Nachdem die drei Rückenteile meines Spencers bereits versteppt sind, stand heute die erste Verbindungsnaht an. Das Projekt ist fantastisch und ich freue mich schon, all die spannenden Details vorzustellen...aber vorerst wird noch eifrig gesteppt!
...and it's also devine to sweeten an afternoon at the sewing table.
After quilting the three parts of the back of the spencer in the past days, I finally added the pieces and made the first seam. The project is amazing and I can't wait to sharing all the fascinating details...but til then there's still plenty of quilting!

Thank you, it was yummy indeed, although first it was in said foam monster state in the oven (lol)...I'm afraid the spencer will still take some time, but hopefully should be finished with the first snwoflakes. The quilting is quite time consuming. I remember, we once talked about re-creating the whole range of met spencers, do you remember? So I'm truly happy I have the chance to assemble this one :)

  2. This sounds delicious! I've made apple sauce but that had none of this good stuff in it, like rum or vanilla. It might make an interesting addition to my holiday tea.

    1. Thank you! I only knew apple sauce recipes where the apples are cooked, this one was new to me, so I had to try...because of the added sugar and the "baking" it finally gets a soft and almost silky texture...and it's very yummy indeed!
      I guess it would be superb for cookies to be dipped in :)

  3. Apfelmus aus dem Ofen - das verbirgt sich also hinter der Apfel-Créme! *lach* Aber es hört sich interessant an, vielleicht wage ich mal einen Versuch...?

    1. Ja, der Name macht's ;)
      Allerdings schmeckt es aus dem Ofen wirklich gut, ein bisschen "bratapfeliger" als Apfelmus.
